Soups: A nice warm fresh soup to begin with before a meal is the way to go……Most often we depend on readymade soups and canned/packaged juices which are processed and not fresh. Alongside natural ingredients not only add flavour but helps us refrain from harmful chemicals and sodium rich products. Tomato Soup is an all time favourite of mine! Any season and at all occasions, it’s always inviting and refreshing!
2 cups tomato puree
1 tablespoon of freshly chopped basil leaves.
½ cup of thick yogurt
Salt and pepper to taste
Mingle all the ingredients and serve chilled (cold soup) or heat gently, stirring constantly until hot.
Make sure the soup does not come to a boil or else the yogurt will simply curdle.
Add chopped garlic and other veggies as desired – Cooked or raw.
If served without yogurt, the soup can serve as a base for Gazpacho.
